Do you have to choose between rooms in hearthfire?

So I noticed that there are two different rooms in the back. Can you have both? Or do you have to choose between them? I was just wondring because I really want both, but I'm not sure if any one could answer then that would be great.

There are 3 options for the 3 wings of your house. U cannot choose them all. My first house was much more of a home. So I went with bedrooms/storage/kitchen

My second house is my mancave. So enchanter tower/trophy room/armory

My third house is a more "think tank" so library, alchemist tower, greenhouse.

Once a room is furnished, are you able to change it? Like chanbe a trophy room to a bedroom?

I would love an answer to this. I don't believe you can, but I'm not sure, and would really like it if someone could clarify this.

no removal options for that on any of my work benches or drafting tables
learned from my 1st house where things were placed
another problem I encountered was that benches would sometimes show options to install items I already had created
