Is it only thieves have these stealthy assassin kill finishing moves? I wonder what they've made for mage and warrior. Later one obviosly will cut monsters into two pieces, while another disintigrates with sorcery.

Mages don't get finishing moves. Warriors will be stabbing their swords through people and chopping off heads.

Such a shame. I was hoping something similar to Fallout 3's laser weapons. Complete disintgration, which turns enemy into a speck of dust on ground.

one of the perks in Destruction is 'Disintegrate'. I think it's in there. I'm not sure about the rest, whether you would be able to see your enemies melting or shatter your frostbitten victim with a SPARTA kick.
