New Build Help...

So I have been getting kind of bored of Skyrim and I am looking for something to freshen the game a little bit! So I was going to start a brand new build, and just have fun with it! Can anyone give me a good build to play with? I would love to hear your suggestions considering I don't have any builds in mind. Also maybe an roleplay ideas or rules that go along with the build?

Have you ever tried a hunting build? I'm loving my Kajiit hunter. I make it so he has to eat every day at least once, sleep every day, can only take pelts from animals he or his follower killed (of that follower is using a bow), no taking the pelt if the animal was killed by any type of blade or magic, and absolutely no fast travel/waiting. I went fairly lenient on restrictions because it's my first role-play. If that is too easy you can make it perma-death or master difficulty or something similar.

I come a across the same feel every couple of months. Then my Hard Drive was somehow wiped and I lost my warrior, archer/hunter, spellsword, and thief characters. So I decided to put a little more time into each of my builds. I've been playing a Nord pure mage for a couple months now, and I'm looking at doing a couple other characters to swap between for a different tyope of challenge or feel. I've been thinking for a couple weeks now and so far I have:

A pacifist type character. He would be a Breton who doesn't wear armor, carries a shield, and uses Alteration, Restoration, Block, Conjures Atronachs, and possibly Illusion. He would be like a healer who is dependent on his conjured creatures and his follower to take out enemies. He would use mage armor perks and his shield(as this does not effect the mage armor perks effectiveness. I'm thinkin he may also want to use cloak spells as another way to damage enemies who are closer. A strict rule with this character is he would never swing a weapon or fire destructive magic. Only passive damage. Another road to explore here is the pickpocket perk of placing poisons in NPC's pockets to do damage. Other support skills could involve speech, sneak, or smithing.

An archer, Robin Hood/Green Arrow style. Stict rules here would be no magic, and no follower. I'm also debating not using shouts, until you absolutely need to use Dragonrend that is. This build would involve a lot of potions/poisons and being very sneaky. You'll need light armor, sneak, archery, alchemy, and smithing for the best gear. You can find or buy and improve enchanted gear, but not make it. No magic schools.

Those are my general thoughts as to a couple of options.
